The Metalliferous Hills of the Maremma of Tuscany is home to Caldana, a small hamlet of Gavorrano. “Accoglienza Turistica Diffusa” is a project that stems from the residents’ desire for future temporary citizens. Booking a holiday in a village means experiencing its people, soaking up its atmosphere, becoming part of a population who loves that place so much and yet decides to open it to outsiders. Your days will be enriched by a warm greeting, a smile, a story, an anecdote, a fantastic experience which will make you feel like a citizen of this magical place.
Program
Day 1
Production, transformation and tasting in the Village of Caldana
Wine tourism and oil tourism are forms of food and wine tourism which are growing in our beautiful town. We have purposely created and put together experiences focused on the production, transformation and tasting of wine and olive oil. These allow visitors to immerse themselves in the culture, history, and local tradition of the village of Caldana which has been handing down the production of excellent wine and oil for generations.
VINEYARD-CELLAR-WINE The experience is structured in three phases: production, transformation and tasting. Visit the vineyards: walk among the vineyards and learn how grapes are grown. Alessandro, our wine grower, will explain the varieties of grapes grown, the pruning methods, disease management and harvesting. Visit the cellar of Azienda Agricola Montebelli to see how the wine is produced and aged. The different phases of vinification, fermentation and ageing in casks of wood and bottles are explained. Guided tasting: guests can taste a selection of wines produced in the Montebelli company with the assistance of the wine expert who will explain the organoleptic characteristics of the wines and pairing
with food.
OLIVE GROVE-MILL-OIL Visit the olive groves with Luigi to become familiar with the different varieties of olives grown in Caldana. Luigi will explain the process of olive picking, usually between autumn and winter. Visit the San Luigi mills where the olives are processed using a clean energy system, the visitors can observe how the olives are transformed into extra virgin olive oil. The pressing and oil extraction methods are explained. To finish, oil tasting, like for the wine. The olive oil can be tasted in different varieties. Luigi will guide you through a tasting of different oils produced, teaching us to recognise the differences in the aroma and flavour
